This DIPA is a bad ass. Straight up. It’s hopiness isn’t just limited to the floral nose or lingering bitterness but a full hop flavor all the way through your palate. We bitter with a Super Alpha, and follow it up with a few flavoring additions throughout the boil. A massive dry hop of Simcoe and Amarillo create a huge aroma profile that really comes through in a big way.

I got to bag it up, bag it up.

One of our most popular beers ever, this light cream ale sits on Madagascar vanilla beans in secondary to give a mellow vanilla flavor. You’ll swear you were drinking a cream soda…with a kick. We use flaked corn and a bit of honey malt to give it a subtle sweetness; that combined with Cascade and Liberty hops make it a treat to drink. I know it sounds kind of like a chick beer, but guys…just consider it your guilty pleasure.

Naming beers may be the hardest thing about brewing. There is just so much pressure to come up with something clever, witty, meaningful, etc. This time around we just kept it simple. We found a picture of a hot chick from the 40′s, and it inspired us. With that…we introduce Pin-Up Pale.

Bittered with NZ Pacific Gem, and dry hopped with Palisade, it’s herbal hop aroma and San Diego-style bitterness push the Pale Ale boundaries. A simple malt bill of pale 2-Row, North American and German crystal, and Dextrine keep it hop forward yet malty balanced.

This Imperial Brown uses over 50 lbs of raw agave extract imported from Tequila country (Jalisco, Mexico) to create an earthy malt profile, helped even more by the perfect blend of crystal malts. Oats are used to create a full body and lasting head. European hops are used to compliment the lightly spicy and earthy character of the agave.

Nothing was more alluring and seductive than the songs of the Sirens, who summoned passing sailors that were quick to meet their demise at the hand of these deceptive temptresses. Our recipe will summon you to take sip after sip of this sweet nectar recipe.

Impossible to have just one. Siren uses Cascade hops and a touch of honey malt to create a smooth malty mouthfeel and a crisp carbonating finish. 6% ABV, 30 IBUs

Sleigh Ride

Tis the season… for a dark German wheat beer. Our Dunkel uses a mild dose of German and English hops, along with Pale 2-Row, Wheat, and specialty malts to create a mellow and tangy wheat flavor. With a dark brown color reminiscent of Rudolph’s yule log, this beer will defiantly stimulate the senses…among other things.
